Pad Thai was created during the dictatorship of Plaek Pibulsonggram, known as Phibun, who ruled Thailand for two periods: 1938-1944 and 1948-1957. This ruler made the request to create a dish that would be an emblem for the country and that would make Thai cuisine stand out in the world.
There was a shortage of rice, so rice noodles gained more strength in various dishes, the creativity and ingenuity of various cooks resulted in the Pad Thai as we know it today.
What makes the origin of Pad Thai peculiar is that it was something planned and encouraged by the government and not an organic recipe that was passed from generation to generation; the reality is that unlike many Asian foods that have years of history, Pad Thai is much more recent and influenced by modern cuisine. The mission worked, as it achieved the desired positioning in Thai cuisine, becoming a success in homes and streets, where there are several street vendors and small restaurants that prepare and sell it every day for lunch and dinner.
The translation of Pad Thai, means "Thai stir-fry" and something very characteristic is the balanced combination of sweet and sour and spicy flavors. The main elements are rice noodles, vegetables, bean sprouts, egg, shrimp, chopped peanuts and spices. It can also be prepared with chicken, beef or veal and is usually served with a slice of lemon, to add that citrusy touch that Thai cuisine often includes. The recipe and seasonings may vary according to the cook, but one of the elements that should not change is the tamarind sauce, which should be made in an artisanal way and over low heat.
